CUBAN CONGRI RICE RECIPE
Here is a simple recipe to prepare arroz congri, a traditional dish of Cuban cuisine:
Ingredients: -
2 cups rice -
4 cups water -
1 cup black beans (cooked) -
1 medium onion, chopped -
1 green bell pepper, chopped -
3 cloves garlic, minced -
2 tablespoons olive oil -
1 bay leaf -
1 teaspoon cumin -
Salt to taste -
Pepper to taste -
Optional: some bacon or chorizo for added flavor ## #
Instructions:
1. **Prepare the beans**: If you don't have cooked beans, start by cooking them. If you use canned beans, simply drain and rinse them.
2. **Sauté the vegetables**: In a large pot, heat the oil over medium heat. Add the onion, bell pepper, and garlic. Sauté until tender and fragrant.
3. **Add the beans**: Add the cooked beans to the pot and mix well. If you wish, you can add bacon or chorizo in this step.
4. **Add the rice**: Add the rice to the bean mixture and stir to mix well with the ingredients.
5. **Add the water and seasonings**: Add the water, bay leaf, cumin, salt and pepper. Bring to a boil.
6. **Cook the rice**: Once the water is boiling, reduce the heat to low, cover the pot and cook for about 20 minutes, or until the rice is tender and has absorbed all the liquid.
7. **Check and serve**: Remove the bay leaf, fluff the rice with a fork and serve hot.
