Lava cake recipe
TIngredients:
4 oz dark chocolate (70% cocoa)
4 oz unsalted butter
2 large eggs
2 egg yolks
1/4 cup granulated sugar
2 tbsp all-purpose flour
Pinch of salt
Butter for greasing the ramekins
Chocolate pieces (optional, for the center)
Instructions:
Preheat the oven: Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour.
Melt the chocolate and butter: In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring in between until smooth. You can also melt them using a double boiler.
Whisk the eggs and sugar: In another bowl, whisk together the eggs, egg yolks, and sugar until smooth and frothy.
Combine mixtures: Gently fold the melted chocolate mixture into the egg mixture. Add the flour and salt, and mix until just combined.
Fill the ramekins: Pour the batter into the prepared ramekins, filling them about 3/4 full. If desired, place a piece of chocolate in the center of each.
Bake: Bake for 12-14 minutes, until the edges are firm but the center is still soft.
Cool slightly: Remove from the oven and let cool for 1-2 minutes. Carefully run a knife around the edges and invert the ramekins onto plates.
Serve: Serve warm, optionally with vanilla ice cream or whipped cream.
